Black Sheep Foods launched the first ever plant-based lamb at Souvla in San Francisco last October. They use novel flavor tech to make plant-based meats that taste even better than their animal counterparts by focusing on recreating wild, heritage, gamey flavors. Their plant-based lamb has had a lot of early success, leading to a net positive in overall sales, and they now have many other incredible chefs (including the U.S.Â’s only two-Michelin star Indian chef!) and restaurants on board.
